I'm getting this exact behaviour. The scan restarts when the window is reopened after being minimised. You can see the progress moving along in the dock icon, but as soon as you reopen it, the scan starts again from 0.
Mac 11.2.3 (20D91)
AVG 19.8 (btw why isn't the version number text selectable in the "About" dialog? Impossible to copy the build code).
The scan still finishes. I just have to avoid clicking on the icon after I start the scan.

Could you check the version of the AVG installed in your PC?
I've been having an issue with the Mac Version of AVG Antivirus, where if I start a scan and click out of the window, the progress bar hangs for a while, and if I click back in, the scan completely resets and starts over from the beginning. It even starts from 0 when I click back in while it's at 45%.

The version I have is 19.6.
I've reinstalled, but the issue still occurs. However, I found that keeping the window in view on the desktop makes the issue less likely to happen.

This doesn't happen when it's minimized. I also made it stop by clicking the arrow on the left side to exit out of the progress bar while the window is still open, So it only happens when the window is completely obscured and I try to click back on it afterward.
